SUMMARY

Reporting to the Food Service manager or Assistant Food Service, Cook II works independently performs moderately difficult tasks in preparing quantities of quickly prepared foods such as steaks, chops, cutlets, hamburgers, eggs, salads and other similar items.

Works under the supervision of the Food Service Manager and Assistant Food Service Manager. The Cook II will act independently or assist in the performance of any and all duties necessary to keep the facility in full operation.
Responsibilities

ESSENTIAL DUTIES & RESPONSIBILITIES

The Essential Duties and Responsibilities are intended to present a descriptive list of the range of duties performed for this position and are not intended to reflect all duties performed within the job. Other duties may be assigned.

  • Prepares in quantities, by various methods of cooking a variety of foods including soups, sauces, meats, fish, vegetables, baked goods, etc.
  • Prepares special foods for detainees requiring special diets.
  • Plans cooking schedule so food is ready at prescribed times.
  • Ensures delivery of food to pod at prescribed times.
  • Provides the measuring, mixing, stirring, cutting, grinding, chopping and seasoning of ingredients according to recipes.
  • Test foods for completion of cooking time and adjust heat controls.
  • Monitors the baking, roasting, broiling, frying and steaming of foods as called for in recipes.
  • Monitors the carving and dividing of portions into individual servings.
  • Assists in the training of detainees.
  • Monitors daily operations in food productions for conformance to establish quality, quantity, safety and sanitation requirements.
  • Reviews menus to determine type and quantity of food to be prepared.
  • Draws required cooking utensils from kitchen storage areas.
  • Loads and unloads delivery trucks as necessary.
  • Work is completed in a priority established by supervision or facility need.
  • All work will be completed with a high degree of professionalism, quality, and craftsmanship.
  • Lulls in workload are used to maintain a clean and orderly work area and to ensure clerical tasks are up to date. Keeps up to date on departmental and facility safety standards and local codes and policies.
  • Inspects food items for quantity, quality, and temperature, assures proper storage and use of inventory. Monitors and logs temperatures.
  • Assists in calculating food requirement estimates; assists in preparing requisitions for supplies
  • and prepares requisitions for food items; and completes related documents and reports
  • Will perform other duties as assigned.
Qualifications

QUALIFICATIONS - EXPERIENCE, EDUCATION AND CERTIFICATION

Required (Minimum) Qualifications
  • S. Citizen or LPR
  • Not Currently Employed by federal agency or active duty military
  • Pass Government Background Checks
  • High school diploma or equivalent
  • Must be able to pass expensive background investigation and pre-employment and random (upon hire) drug testing
  • One year experience in large scale cooking
Knowledge, Skills, Abilities, and Other Characteristics
  • Ability to direct the operation of all phases of the dining facility functions including economical ordering, use of food stuffs, cleanliness, sequence of food preparation, and serving techniques.
  • Ability to establish and maintain cooperative relationships with management, kitchen staff, ICE Agents and GPS personnel.
  • Knowledge of principles, procedure and equipment used in the storage, care preparation, cooking, baking, and serving of food quantity.
  • Knowledge of techniques of supervision, training, and safe work practices.
  • Ability to speak clearly and concisely both in oral and written communication.
  • Must be able to follow standard code of conduct pertaining to interaction with the detainee population.
Preferred
  • Ability to speak, write and comprehend a second language (Spanish or any language)
PHYSICAL REQUIREMENTS

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job the employee is frequently required to walk and continuously to stand. In addition, may be squatting, kneeling, sitting, bending, reaching and climbing for extended periods of time will also be required. The employee must occasionally lift and/ or move up to 50 pounds such as milk crates, frozen foods, canned foods etc.

WORK ENVIRONMENT

Work Environment characteristics described here are representative of those that must be borne by an employee to successfully perform the essential functions of this job.

Individual will be required to work in all areas of the detention facility working in close proximity to detainee population. Individual will need to be able to quickly respond to a change in work demands. May be exposed to cleaning chemical and solvents. May work in close proximity to steam or gas ovens that produce intense heat.
